Spice up Your Summer!

Invited for a cookout at friends and wondering what to bring? How about chips and fresh Pico de Gallo? We have "Salsa Kits" on the Farmstand which include everything you need for a spicy cool refreshing salsa or Pico de Gallo to go with a margarita, a cold beer or icy lemonade.

Sweet Betsy Farm Fresh Pico de Gallo

1-2 medium Tomatoes ( ¾ - 1 pound), chopped

Medium sweet or red onion, finely diced

1-2 Jalapeno peppers, minced

1-2 Tablespoon fresh Cilantro, chopped

1 clove garlic, minced

Juice of 1 lime

Salt to taste

Mix all ingredients together, starting with half the minced Jalapeno and adding more once you taste. You can always add more heat but you can't take it away!

This recipe will make about 1 ½ cups of Pico de Gallo which stores in fridge for a few days. Serve with Tortilla chips or try using it as a marinade for baked chicken.
